Healthier Breakfast Banana Pancakes

Half a cup plain white flour, half a cup wholewheat flower, 1 tbsp sugar, 1 tsp baking powder, pinch of salt (optional), 1 cup semi-skimmed (or skimmed) milk, 1 egg, 1 tbsp extra virgin olive oil, 1 banana (sliced), olive oil for frying, honey for serving

Put the dry ingredients in a bowl, then add the wet ingredients mixing well until you have formed a pancake batter. Add the banana and mix well. Heat the oil in a sauté pan and, using a large serving spoon, add spoonful of mixture to the pan making sure they don’t touch each other. Sauté for a few minutes each side until they are golden brown. Serve drizzled with Verlina’s Pine Honey.

Alternatively, add a handful of blueberries to the mixture before frying. Makes around 15 mini pancakes

Baked Cheese Pasties

Half a cup natural yoghurt, half a teaspoon baking soda, half a cup olive oil, half a teaspoon salt, juice of 1 orange, half a kilo plain flour, 360 grams crumbled feta cheese, 1 egg

Prepare the dough: Beat olive oil with yoghurt, add baking soda diluted in orange juice, salt and flour (little by little) until you achieve a soft and elastic dough.

Prepare the filling: Combine the feta cheese and egg.

Take pieces of dough the size of a walnut and roll each one out into a small circle. Place 1 tsp filling on one half and cover with the other half. Press the edges down with a fork to close firmly, baste with beaten egg white and bake in moderate heat until golden brown for about 25 minutes.

Walnut Cake with Olive Oil

1 cup olive oil, 1 cup sugar, 6 eggs (separated), 1 cup milk, 1 tbsp ground cinnamon and clove, 1 cup coarsely ground walnuts, 3 cups plain flour, 3 tsps baking powder

Syrup: 1 cup sugar, 1 tbsp honey, half a cup water, 1 tbsp lemon juice

In a large bowl, start beating olive oil with sugar and add yolks, cinnamon and clove, walnuts, baking powder diluted in milk and the flour, stirring the mixture continuously. Add beaten egg whites and combine carefully. Pour the mixture into an oiled baking tin and bake at moderate heat for about an hour. Remove the cake from the oven and allow it to cool a little. Put sugar, honey, water and lemon juice in a pot and boil for 10 minutes. Pour this hot syrup over the warm walnut cake.

Apple Cake with Olive Oil

Half a cup olive oil, 1 cup sugar, 5 eggs (separated), 1 tbsp ground cinnamon and clove, 1 tsp baking soda, juice of 1 lemon, 3 tbsps brandy, 1 and a half cups plain flour, 2 tsps baking powder, 1 kg apples (peeled, cored and sliced), 2 grated pears

Beat olive oil and sugar and continue with cinnamon and clove, egg yolks, baking soda diluted in lemon juice, baking powder diluted in brandy, flour and finally the egg whites beaten until stiff. Combine carefully and pour half of the mixture into an oiled baking tin. Place fruit on top and pour the rest of the batter on the fruit. Bake at moderate heat for almost an hour.

Chocolate Cake with Olive Oil

1 cup olive oil, 1 and a half cups sugar, 5 eggs (separated), 1 cup milk, half a teaspoon vanilla extract, 250g chocolate, 500g self-raising flour

In a large bowl, beat olive oil and sugar and continue by adding yolks, vanilla extract, milk, chocolate cut into small pieces, flour and finally egg whites beaten stiff. Pour mixture into oiled baking tin and bake in moderate oven for a little less than an hour.

Olive Oil Cake

1 and a half cups olive oil, 1 and a half cups sugar, 1 cup milk, 4 eggs (separated), 2 tsps baking powder, grated rind and juice of 1 lemon, 1 tsp baking soda, 1 tbsp ground cinnamon and clove, 3 and a half cups plain flour

In a large bowl, beat olive oil and sugar and continue by adding yolks, cinnamon and clove, lemon rind, baking soda diluted in lemon juice, baking powder diluted in milk, flour and finally egg whites beaten stiff. Combine the whites very carefully with the rest of the mixture, transfer to an oiled baking tin and bake in moderate oven for about an hour.

Olive Oil Biscuits (Koulourakia)

3 cups olive oil, 2 cups sugar, juice of 1 medium orange and 1 lemon, 1 tbsp ground cinnamon, 5 tbsps brandy, 2 tsps baking powder, 1 tsp baking soda, 1 cup roasted sesame seeds, 1.2 kg plain flour

In a large bowl, beat olive oil and sugar until creamy. Add baking soda diluted in juice, cinnamon, baking powder diluted in brandy and sesame seeds, beating all the time. Slowly sift as much flour as needed in order to make a soft, elastic dough. Cover and put dough in the fridge for 30 minutes. Take pieces of dough the size of a walnut and roll in a rope. Join the ends to form hoops and place them on a baking sheet. Bake in a moderate oven for about 20 minutes until golden brown.

Orange Biscuits

2 cups olive oil, 2 cups sugar, 1 cup fresh orange juice, 1 tbsp ground cinnamon and clove, 1 tbsp baking powder, 1 tsp baking soda, 1 kg plain flour

In a large bowl, beat olive oil and sugar until creamy. Add baking soda diluted in orange juice, cinnamon and clove and finally flour sifted together with baking powder stirring consistently until a dough begins to form. Knead well until the dough is soft and elastic and doesn’t stick to your hands. Cover with a towel and put in the fridge for 30 minutes. Take pieces of dough the size of a walnut and roll in a rope. Join the ends to form hoops and place them on a baking sheet. Bake in a moderate oven for about 20 minutes until golden brown.
